Purchasing Pork

,You've seen pork listed for sale and your interested in purchasing but have no idea what to expect. Here's a quick tutorial to help answer some of your questions.

Question 1: How large will the hog be before it heads to butcher?
Answer: We aim for a live weight of 250-300 lbs.

Question 2: What is HCW? How is that determined?
Answer: HCW is Hot Carcass Weight. It's determined after the slaughter process, with the guts, hide and head removed.

Question 3: What cuts can I get? 
Answer: Below is a basic diagram.

Question 4: Will I get smoked meat?
Answer: Yes! It's all included in the pricing.

Question 5: How much will I get back?
Answer: Depending on if you get bone in or boneless, will determine how much actual meat you get back. 

Question 6: How long will it take to get it back?
Answer: We usually allow 14 days to get everything back, including smoked meats.
